    Amish Grape Tapioca Pudding

    Simple Step-by-Step Instructions to Make Grape Tapioca

    1. Boil the grape juice: Pour 48 ounces of Concord grape juice into a large saucepan. Set the heat to medium/high and bring the juice to a boil. Stir occasionally to help it heat evenly.
    2. Add sugar, salt, and tapioca: Once the juice is boiling, add sugar, a pinch of salt, and minute tapioca. Whisk constantly as you add the tapioca to avoid clumping. This step is important because tapioca can form clumps if not stirred well.
    3. Boil the mixture: Bring the mixture back to a rolling boil. Keep whisking to make sure the tapioca cooks evenly and doesn't stick to the bottom of the pan. Let it boil for approximately 8 minutes, whisking occasionally.
    4. Remove from heat: Remove the saucepan from the heat and set it aside. Let the mixture cool completely. It will continue to thicken as it cools.
    5. Whip the cream: In a chilled mixing bowl (chill it in the fridge for a few minutes), pour 1 ½ cups heavy whipping cream. Add a bit of powdered sugar to help stabilize it. Use a hand mixer or stand mixer and beat on medium/high speed until the cream forms stiff peaks. To check, dip the beaters in - if the cream stands up on its own and doesn't fall over, it's done. You can also use thawed Cool Whip for an easier shortcut or if this dessert will be served for a summer picnic.
    6. Mix in the whipped cream: Once the grape mixture is completely cooled, mix the whipped cream into it until combined.
    7. Chill and serve: Refrigerate the dessert for at least 2 hours, to let it set and chill. When ready, serve and enjoy!

    Whisking the tapioca: Be sure to whisk constantly when adding tapioca to prevent clumping. If you stop, the tapioca might form lumps.

    Chill the bowl for whipped cream: A cold bowl and beaters help the cream whip faster and create more volume.

    Cream consistency: Don't overwhip the cream - it should be thick and form stiff peaks, but if you whip it too much, it will start to separate.

    • Let it boil, whisking occasionally for approximately 8 minutes.
    • Remove from the heat and cool completely.
    • In a chilled mixing bowl, whip the heavy cream, along with a tablespoon or two of powdered sugar, until thick and creamy. (If desired, you can use thawed Cool Whip instead.)
      1 ½ cups heavy whipping cream, whipped (or thawed Cool Whip, as desired)
    • Mix the whipped cream into the cold tapioca. Chill for at least two hours and serve.
    • Keep refrigerated in a closed container for up to 3 or 4 days. Give it a quick stir before serving.

    Notes

    This pudding doesn't get very thick using ¾ cup tapioca. If you prefer it thicker, you can add up to a cup of tapioca.
    When serving grape tapioca pudding for a summer picnic or outdoor event, I recommend using Cool Whip instead of whipped cream because it is more stabilized.
