    • Butter - Adds rich, creamy flavor and helps the caramel base come together. (Use real, salted butter.)
    • Brown sugar - Gives the frosting its deep caramel taste.
    • Heavy cream or whole milk - Cream makes it richer, but milk works fine too.
    • Powdered sugar - Sweetens and thickens the frosting to a spreadable consistency. (If you desire a thinner frosting, cut back on the amount.)
    • Salt (optional) - Just a bit of salt enhances the caramel flavor and balances the sweetness. It keeps the frosting from tasting too sugary and brings out the rich, buttery notes.

    Step-by-Step Instructions With Extra Tips

    1. Melt the butter and brown sugar - In a medium saucepan over medium heat, melt the butter and brown sugar, stirring constantly.
    Tip: Use a heavy-bottomed pan and keep the heat moderate - too high, and the sugar may scorch.

    2. Bring to a simmer - Once the mixture is fully melted and combined, bring it to a gentle boil. Let it simmer for 2 full minutes, stirring occasionally.
    Tip: This step helps dissolve the sugar and start the caramelization process. Don't walk away - keep it moving so it doesn't burn or separate.

    3. Add the cream and salt - Slowly pour in the heavy cream or whole milk and salt, stirring as you go. Bring it back to a gentle boil.
    Tip: If your cream is cold, add it slowly to prevent the mixture from seizing or bubbling up too fast.

    4. Whisk in powdered sugar - Remove the pan from heat. Whisk in 2 cups of powdered sugar until the frosting is completely smooth.
    Tip: If it looks lumpy at first, keep whisking - it usually smooths out within a minute. For a silkier finish, you can sift your powdered sugar first, but it's not required.

    5. Spread while warm - This frosting will look thin right after cooking, but it thickens as it cools. For best results, pour or spread it over your cinnamon rolls while both the rolls and the frosting are still warm.
    Tip: If it firms up too much before you spread it, just warm it slightly and stir in a splash of cream or milk to loosen it again.

    Can I Make This Caramel Frosting Ahead of Time?

    You can - but it's much easier to work with when it's warm. If you make it ahead, just warm it gently in a saucepan or microwave until it's pourable again (you may need to add a splash of milk as well).

    • ½ cup butter (1 stick)
    • 1 cup brown sugar
    • ¼ cup heavy cream
    • 2 cups powdered sugar

    Instructions
     

    • In a saucepan, melt the butter and brown sugar. Bring it to a boil and simmer for 2 minutes, stirring constantly.

    • Add the cream and salt and bring it to a gentle boil.

    • Remove from the heat and whisk in powdered sugar until smooth.
      2 cups powdered sugar
    • The frosting is very thin when finished cooking, but it thickens as it cools. If you wait to spread the frosting until it's cold, it will be hard to spread. So I recommend waiting to make the frosting until your rolls are almost done baking because you want the frosting to be warm, making it easier to spread.)
    • This makes enough frosting for about 16 medium-sized cinnamon rolls.

    This caramel frosting goes along with my recipe for Amish cinnamon rolls.
    Tip * If you want to be able to easily pour/drizzle/spread this frosting, it is very important that you do not mix it until ready to use. It gets very thick once cooled.
