How to Make Layered Lemon Dessert (Step-by-Step Instructions)
Step 1: Make the Crust
- Preheat your oven to 350°F.
- In a medium bowl, mix together the flour, chopped pecans, and softened butter until it forms a crumbly dough.
- Optional: You can also use melted butter instead of softened butter. It makes the dough easier to mix and creates a slightly denser, more cohesive crust. Just stir everything together until evenly moistened.
- Press the dough evenly into the bottom of a 9x13-inch pan.
- Bake for 15 minutes, or until the crust is very lightly browned.
- Set it aside to cool completely.
Tip: Chop the pecans into small pieces-not too big, but not powder fine either. If they're too large, the crust can be crumbly. If they're too fine, you'll lose that nice nutty texture. (I give mine a few quick pulses in my Ninja chopper - affiliate link.)
Step 2: Make the Cream Cheese Layer
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar and mix well.
- Gently fold in the Cool Whip (or whipped cream) until just combined.
- Spread this mixture evenly over the cooled crust.
Step 3: Make the Lemon Pudding Layer
- In another bowl, whisk together the milk and instant lemon pudding mix.
- Mix for 2 minutes until thickened.
- Spread the pudding over the cream cheese layer.
Step 4: Add the Topping
- If you'd like, spread more Cool Whip or whipped cream over the top for an extra fluffy finish.
Step 5: Chill and Serve
- Cover the dessert and refrigerate for at least 2 hours before serving.
- Store leftovers in the fridge for up to 4-5 days.

Cool Whip vs. Whipped Cream: Which to Use?
When making this lemon pudding dessert, you can choose between Cool Whip and whipped cream. Both options work great, but they have different benefits depending on your needs.
Cool Whip Pros:
- Convenience: Cool Whip is ready to go right out of the tub, so you don't need to whip it yourself. This makes it a time-saver when you're in a hurry.
- Stays firm: It holds its shape well even in warmer weather.
- Longer shelf life: Cool Whip keeps well in the fridge, which means you can store the dessert for several days without worrying about the topping losing its texture.
Cool Whip Cons:
- Contains preservatives: Cool Whip includes stabilizers and preservatives, which some people prefer to avoid in favor of more natural ingredients.
- Less fresh taste: While it's creamy, it doesn't have the same fresh, light taste as homemade whipped cream.
Whipped Cream Pros:
- Fresh and fluffy: Whipped cream adds a homemade touch with a lighter, fluffier texture that many people love. It gives the dessert a fresh, natural taste that's hard to beat.
- No preservatives: It's made from just cream and sugar, so it's a cleaner, all-natural option.
- Customizable sweetness: You can adjust the sweetness by adding as much or as little sugar as you like, making it more versatile for your taste preferences.
Whipped Cream Cons:
- Requires whipping: You'll need to take an extra minute to whip the cream into stiff peaks.
- Can soften faster: Whipped cream can sometimes lose its shape or soften more quickly than Cool Whip, so it's best to serve the dessert well-chilled.
How to Use Whipped Cream in This Lemon Dessert
If you prefer whipped cream instead of Cool Whip, here's how you can easily add it to the cream cheese layer:
- Simply add approximately 1 ½ to 2 cups of heavy whipping cream directly to the beaten cream cheese and powdered sugar mixture (no need to whip it separately).
- Mix everything together and beat on high speed until it's thick and smooth, then spread evenly over the cooled crust.
Extra Whipped Cream for Topping:
If you want to add extra whipped cream on top, here's how to make it:
Whip 1 ½ to 2 cups of heavy cream with a tablespoon or two of powdered sugar and a teaspoon of vanilla extract until it forms soft peaks.

Homemade Lemon Pudding
In my Amish home, we always used instant puddings to make desserts like this. However, if you are the type who doesn't like to use instant pudding mixes, feel free to make your own with fresh lemons. Here's a simple 60-second lemon pudding recipe, or you could try this cooked lemon pudding recipe. I'm sure homemade pudding would take the flavor up another notch.
Easy Variations: Customize Your Dessert
You can easily change up the flavors of this layered dessert by swapping out the pudding or topping.
- Swap the Lemon Pudding: Try using chocolate pudding, vanilla pudding, or butterscotch pudding for a new flavor.
- Top with Pie Filling: Instead of lemon pudding, you can top the dessert with cherry pie filling, blueberry pie filling, or whatever kind of pie filling you'd like.
- Cheesecake: If you prefer a thicker cheesecake layer, feel free to use two packages of cream cheese instead of only one, then add extra sugar as desired.
I hope you enjoy this classic layered lemon dessert with a pecan crust as much as we do. It never lasts long at our house. 🙂
