    Outrageous Cookies Recipe

    Oatmeal Chocolate Chip Peanut Butter Cookies

    Outrageous Cookies are like a party in your mouth! Soft, chewy, and packed with a perfect blend of creamy peanut butter, hearty oatmeal, and gooey chocolate chips. It's like getting all your favorite cookies rolled into one irresistible treat!

    These outrageously delicious chocolate chip peanut butter oatmeal cookies will satisfy every craving in a single bite.

    I don't know where this outrageous cookie recipe originated, but it is popular in Amish cookbooks.

    Ingredients

    1. White Sugar provides sweetness to the cookies and helps with spreading and browning during baking.
    2. Brown Sugar adds moisture and a slight caramel flavor. It also contributes to the chewiness and helps with browning.
    3. Softened Butter provides richness, flavor, and moisture. It also helps with spreading and contributes to the texture.
    4. Creamy Peanut Butter adds a distinct nutty flavor and richness to the cookies. It also contributes to the chewiness and moistness of the final product. (I recommend using a quality brand such as Jif or Skippy.)
    5. Vanilla Extract enhances the flavor.
    6. Eggs bind the ingredients together, provide structure, and contribute to the texture of the cookies.
    7. All-Purpose Flour is the main dry ingredient. It provides structure and helps hold everything together.
    8. Oatmeal adds texture, chewiness, and a nutty flavor to the cookies. It also adds some heartiness and nutritional value. (Use rolled oats or quick oats - rolled oats may produce a chewier texture while quick oats produce a softer texture and blend into the dough more.)
    9. Baking Soda acts as a leavening agent, helping the cookies to rise and become soft and fluffy.
    10. Salt enhances the flavor.
    11. Chocolate Chips add sweetness, richness, and bursts of chocolate flavor to the cookies. They also provide melty pockets of chocolate throughout the cookie. (Dark chocolate chips are my first choice.)
    Ingredients: flour, peanut butter, sugar, brown sugar, oats, vanilla, butter, baking soda, eggs, and chocolate chips.

    How to Make Outrageous Chocolate Chip Cookies

    1. Mix Wet Ingredients:
      • In a large bowl, beat together white sugar, brown sugar, softened butter, and creamy peanut butter until smooth and creamy.
      • Add vanilla extract and eggs, and mix well.
    2. Combine Dry Ingredients:
      • In a separate bowl, mix all-purpose flour, oatmeal, baking soda, and salt.
    3. Combine Wet and Dry Mixtures:
      • Add the dry ingredients to the wet mixture, mixing until well combined.
    4. Add Chocolate Chips:
      • Stir in two cups of chocolate chips until evenly distributed throughout the dough.
    5. Bake:
      • Scoop the dough onto greased cookie trays and bake at 350°F (175°C) for approximately 10 minutes, or until the edges are lightly golden. Centers may look slightly undercooked.
    6. Cool and Store:
      • Let the cookies rest on the tray for a minute, then transfer them to a wire rack to cool completely.
      • Store the cooled cookies in an airtight container. They can also be frozen to keep them fresh longer.

    Do I Have to Use Chocolate Chips?

    Nope! Feel free to make these outrageous cookies without chocolate chips. You can skip them altogether if you prefer. Or swap them out for other mix-ins like peanut butter chips, butterscotch chips, M&Ms, Reese's pieces, raisins, pecans, or anything else you think would be good in there.

    Storing Peanut Butter Oatmeal Cookies

    After baking, store the Peanut Butter Oatmeal Chocolate Chip Cookies in an airtight container at room temperature for up to 3 days.

    Since oats are a drying ingredient, these cookies will become stale more quickly. Therefore, I recommend placing some of them in the freezer to keep them fresh.

    I typically keep out whatever I think we will eat in the first day or two and freeze the rest in another airtight container. Frozen cookies stay fresh for up to two months.

    When you're ready to enjoy them, take the cookies out of the freezer about 30 minutes before serving. Or you can even munch on them straight from the freezer. I have a couple of cookie monsters at my house who love frozen cookies. 😉

    Ingredients
      

    • 1 cup white sugar
    • ⅔ cup brown sugar
    • 1 cup softened butter (2 sticks)
    • 1 cup creamy peanut butter
    • 2 teaspoons vanilla extract
    • 2 large eggs

    • 1 cup oatmeal
    • 2 teaspoons baking soda

    Instructions
     

    • Preheat oven to 350℉.
    • In a large mixing bowl, with the paddle attachment, beat sugars, butter, and peanut butter until smooth and creamy.
      1 cup white sugar, ⅔ cup brown sugar, 1 cup softened butter, 1 cup creamy peanut butter
    • Add the vanilla and eggs and mix well.
      2 teaspoons vanilla extract, 2 large eggs
    • Mix the dry ingredients in a separate bowl, then add them to the wet mixture and mix to combine.
      2 cups all-purpose flour, 1 cup oatmeal, 2 teaspoons baking soda, ½ teaspoon salt
    • Stir in the chocolate chips. Then scoop the dough onto greased cookie trays and bake for approximately 10 minutes.
      2 cups chocolate chips
    • Let the cookies rest on the tray for a minute then remove them to a wire rack to cool. Store in an airtight container. Cookies can be frozen to keep them fresh longer.

    Notes

    I recommend using a quality brand of peanut butter. Can use rolled oats or quick oats.
    Yields approximately 50 small cookies (using a 1 Tbsp. size scoop).
