    2. Add dry ingredients:
      • Gradually mix in the flour, oats, baking powder, baking soda, and salt until the mixture forms a crumbly dough. (Don't overmix once you add the dry ingredients; mix just until combined to keep the crumbs tender.)
    3. Reserve crumbs for topping:
      • Set aside about 2 cups of the crumb mixture for the topping.
    4. Bake the crust:
      • Press the remaining crumb mixture evenly into the bottom of a greased 9x13-inch baking pan (affiliate link). Bake in a preheated oven at 350°F (175°C) for 15 minutes, until lightly golden.
    5. Prepare the raisin filling:
      • While the crust bakes, combine sugar, clear jel (or cornstarch), sour cream, egg yolks, and raisins in a saucepan. Cook over medium heat, stirring constantly, for 5 to 8 minutes until thickened.
    6. Assemble the bars:
      • Pour the raisin filling evenly over the baked crust.

    Ingredients
      

    • 1 cup butter, softened
    • 1 cup brown sugar
    • 1 ¾ cups all-purpose flour
    • 2 cups quick oats
    • 1 teaspoon baking soda
    • ½ teaspoon baking powder
    • ¼ teaspoon salt

    Filling:

    • 1 cup sugar
    • 1 ½ tablespoons clear jel or cornstarch
    • 4 large egg yolks
    • 2 cups sour cream
    • 1 ½ cups raisins

    Instructions
     

    • Preheat oven to 350℉.
    • In a large mixing bowl, cream butter and brown sugar.

    • Beat in flour, oats, baking powder, soda, and salt. (Mixture will be crumbly.)
      1 ¾ cups all-purpose flour, 2 cups quick oats, ½ teaspoon baking powder, 1 teaspoon baking soda, ¼ teaspoon salt
    • Set aside 2 cups of the crumb mixture.
    • Pat the remaining crumbs into a greased 9x13" baking pan.
    • Bake at 350℉ for 15 minutes. Set aside.

    Filling:

    • Mix the sugar and clear jel in a saucepan, add the remaining filling ingredients.
      4 large egg yolks, 1 ½ cups raisins, 1 cup sugar, 1 ½ tablespoons clear jel or cornstarch, 2 cups sour cream
    • Bring it to a boil over medium/high heat. Cook, stirring constantly, for 5 - 6 minutes.
    • Pour the filling mixture over the crust.
    • Sprinkle the reserved crumbs over the top, lightly press them into the filling, and return to the oven for 15 - 18 minutes.
    • Cool before cutting into bars.
    • Keep refrigerated in a closed container for up to a week.
    • These bars also freeze well - put into an airtight container with parchment between the layers. Thaw and enjoy!

    Notes

    For extra flavor, try adding a pinch of cinnamon or nutmeg to the crumb mixture.
    For variation, try these bars with dried cranberries or chopped dates instead of rasisins.
