    Ice cream pie with a Rice Krispie pie crust is a delicious Amish recipe that's as easy to make as it is fun to eat. The buttery, crunchy Rice Krispie crust pairs perfectly with creamy ice cream, creating a sweet, satisfying contrast in every bite.

    You can fill it with any ice cream flavor you love and top it with whipped cream, a drizzle of chocolate or caramel, and a sprinkle of nuts for a dessert that's always a hit.

    Step by Step Instructions to Make Ice Cream Pie With Rice Krispie Crust

    1. Prepare the Pie Dish:
      Grease a deep-dish 9-inch pie pan (affiliate link) with butter to prevent sticking.
    2. Melt the Butter and Marshmallows:
      In a large saucepan, melt the butter over medium-low heat. Add the mini marshmallows and stir until completely melted and smooth.
    3. Mix in the Rice Krispies:
      Remove the saucepan from the heat. Add the Rice Krispies and stir until they are evenly coated with the marshmallow mixture.
    4. Form the Crust:
      Press the Rice Krispie mixture evenly into the bottom and up the sides of the prepared pie pan. Use lightly buttered hands or a spatula to prevent sticking.
    5. Cool the Crust:
      Let the crust cool completely at room temperature to firm up.
    6. Add the Ice Cream:
      Fill the cooled crust with slightly softened ice cream, spreading it evenly.
    7. Freeze:
      Cover the pie and place it in the freezer until firm, at least a few hours.
    8. Add Toppings and Serve:
      Just before serving, top with whipped cream and any desired toppings like chocolate sauce, caramel drizzle, or chopped nuts. Slice and serve.
    9. Storage:
      Keep any leftovers covered and frozen. Cover it tightly with at least two layers of plastic wrap or foil, or store it in an airtight container to prevent freezer burn. Keep it in the freezer for up to 2 weeks.
    10. Soften:
      If your freezer freezes really hard, you may need to let the pie soften a bit before serving. When ready to serve, allow the pie to rest in the fridge for 10-15 minutes before cutting. This will help the ice cream soften just enough to slice cleanly, while still holding its shape.

    Whipped Cream Topping

    You can top your ice cream pie with a store-bought can of whipped cream for convenience, or make your own for a fresher taste. To make homemade whipped cream, simply whip cold heavy whipping cream with a bit of sugar and a splash of vanilla extract until soft peaks form. (I put mine in a piping bag (affiliate link) with star tip to pipe dollaps of whipped cream on top.)

    Peanut Butter Rice Krispie Pie Crust

    Here's another version of Rice Krispie crust you might like to try!

    To make a Rice Krispie crust without marshmallows, simply mix ½ cup Karo syrup with ½ cup creamy peanut butter until smooth. Add 3 cups of Rice Krispies and stir until well combined. Press the mixture evenly into a buttered 9-inch pie plate.

    This crust adds a rich, nutty flavor that pairs perfectly with chocolate, vanilla, or your favorite choice of ice cream! While it is equally as amazing as the marshamallow rice krispie crust, it's a bit harder to cut through after freezing.

    Can I Make This Pie Crust Ahead of Time?

    Yes, you can make this Rice Krispie crust ahead of time. Here are some tips:

      • After pressing the crust into the pie dish, let it cool completely.
      • Cover it tightly with plastic wrap or foil to prevent it from drying out.
      • Store at room temperature for up to 2 days before adding the ice cream.
    2. Freezer Option:
      • For longer storage, freeze the crust (unfilled) in the pie dish.
      • Wrap it well with plastic wrap, then foil to avoid freezer burn.
      • It'll keep for up to 1 month.

    Pie Crust:

    • ¼ cup butter (½ stick)
    • ½ pound mini marshmallows (approx. 4 ¼ c.)
    • 5 cups Rice Krispies

    2 quart ice cream

    Pie crust:

    • Grease a deep dish 9-inch pie pan with butter.

      ¼ cup butter, ½ pound mini marshmallows
    • Remove from the heat and add the Rice Krispies. Stir until well mixed.
      5 cups Rice Krispies
    • Press the Rice Krispie mixture evenly into the bottom and sides of the prepared pie dish. (Use lightly buttered hands or a spatula to prevent sticking.)
    • Cool completely.
    • Fill with slightly softened ice cream. Cover and freeze until firm or until ready to serve.
    • Just before serving, top with whipped cream, and any other desired ice cream toppings. Slice and serve.
    • Keep frozen in airtight container or wrapped in foil.

    Notes

    We like to use this Rice Krispie crust recipe to make Rice Krispie ice cream pie. Use any flavor of ice cream desired and any additional toppings you would like.
    I personally love it the most with vanilla ice cream, topped with dollaps of whipped cream, drizzled with chocolate and caramel sauce, and sprinkled with chopped peanuts.
    I am adding a second Rice Krispie crust recipe that is also good (especially if you love peanut butter)...   Mix ½ c. Karo syrup and ½ c. peanut butter. Add 3 cups Rice Krispies and mix well. Spread into 9" greased pie plate.
