What Kind of Bread Is Best for Stuffed French Toast?
For this overnight French toast, sturdy thick-sliced bread works best because it can absorb the egg custard without falling apart. I use Texas toast, but you can also use thick slices of French bread or brioche. (You'll want approximately 8 cups of cubes.)
Bread that's slightly stale or a day old is especially good for this baked French toast because it has less moisture and can soak up more of the custard. If you're using fresh bread, simply cube it and let it sit uncovered for a little while before assembling the casserole.
Why Let It Sit Overnight?
Letting the French toast sit overnight gives the thick bread plenty of time to absorb the egg custard. This creates a soft, creamy center while the top and edges bake up golden and slightly crisp.
The overnight soak also makes this stuffed French toast especially convenient for breakfast. Assemble it the night before, refrigerate it, and in the morning, all you need to do is bake it.
How to Make Stuffed Overnight French Toast
This overnight French toast is easy to assemble the night before and bake in the morning.
- Cube the bread. Cut 10 slices of Texas toast into approximately 1-inch cubes. Place half of the bread into a well-buttered 9×13-inch baking dish. (You might need a bit more than half of it to cover the bottom of the pan.)
- Add the filling. Cut the cream cheese into tiny cubes and scatter it evenly over the bread. Add the blueberries.
- Add the remaining bread. Spread the remaining bread cubes evenly over the blueberries.
- Make the custard. Beat the eggs in a large bowl until smooth. Add the milk, maple syrup, and salt, and whisk until well combined.
- Soak overnight. Pour the egg mixture slowly and evenly over the entire casserole. Cover and refrigerate overnight.

- Bake. In the morning, remove the casserole from the refrigerator and let it sit on the counter while the oven preheats to 375°F. Sprinkle the top with cinnamon, cover with foil, and bake for 25 minutes.
- Finish baking. Remove the foil and bake for another 20-30 minutes, or until the center is set and the top is golden brown. The center can have a slight jiggle but should not look wet or liquidy.
- Rest and serve. Let the French toast rest for about 10 minutes before serving.

What to Serve With Blueberry Cream Cheese Stuffed French Toast
This blueberry cream cheese French toast is sweet and filling enough to serve on its own, but it also pairs well with a few simple breakfast favorites. Serve it with crispy bacon or breakfast sausage for a savory contrast.
You could also serve it alongside scrambled eggs and a pot of hot coffee for an easy breakfast or brunch. A drizzle of maple syrup over the warm French toast is also delicious.

Frequently Asked Questions
You can, but the overnight soak is recommended. It gives the thick bread plenty of time to absorb the egg mixture, resulting in a softer, more evenly baked casserole. If you didn't plan ahead far enough, you could bake it sooner, but I recommend letting it sit for at least a couple of hours if possible.
Yes. You can use frozen blueberries in this blueberry stuffed French toast without thawing them first. Keep in mind though, that frozen berries may release a little more juice as they bake, so you may want to toss the berries in a bit of flour before adding them.
Absolutely. Blueberries are especially good with the cream cheese in this recipe, but you could experiment with other berries. Raspberries or sliced strawberries would be great as well.
The center should be set but can still have a slight jiggle. It should not look wet or have loose egg custard pooling in the center. The top should be golden brown. (You may have to poke a knife into the center to make sure it's not still runny.)
Cover and refrigerate leftovers within two hours of baking. It should keep in the refrigerator for up to 5 days and can be reheated in the microwave or oven.

This is a delicious blueberry cream cheese French toast recipe. The only change was I had 2% milk on hand so that’s what I used. It came out fine. Will be making this again!
