Amish breakfast casserole is a classic, comforting dish that layers bread, sausage, eggs, and cheese for a filling breakfast or brunch option. It is made ahead and refrigerated overnight for a delicious and hassle-free breakfast.
3 c.diced ham or fried bacon (or 1 lb. cooked sausage)
3c.shredded cheddar cheese
1Tbsp.all-purpose flour
1tsp.dry mustard
6largeeggs
2Tbsp.melted butter
2 1/2c.milk
3/4 tsp.salt
3/4tsp.onion powder or dried onion flakes
1/2tsp.black pepper
Instructions
Starting with the bread cubes, layer the first three ingredients into a greased 9x13" baking dish.
3 c. bread cubes (about 4 slices), 3 c. diced ham or fried bacon (or 1 lb. cooked sausage), 3 c. shredded cheddar cheese
Combine flour and mustard and sprinkle evenly over top of the cheese.
1 Tbsp. all-purpose flour, 1 tsp. dry mustard
Beat eggs well and add the remaining ingredients. Pour this mixture over the top.
6 large eggs, 2 Tbsp. melted butter, 2 1/2 c. milk, 3/4 tsp. salt, 1/2 tsp. black pepper, 3/4 tsp. onion powder or dried onion flakes
Cover and refrigerate overnight.
The next morning, bake the casserole (uncovered) at 350℉ for 55 minutes to an hour. It will be puffed up when finished, but it sinks again after removing from the oven.
Let it rest for several minutes and serve.
Cool, cover, and refrigerate any leftovers.
Notes
We love Tony's Creole seasoning, and I use that instead of salt. (My family loves dishes with a bit of a spicy kick.) And if you love spicy food, feel free to add a bit of cayenne pepper as well.You can also add chopped veggies (mushrooms, onions, peppers), fresh herbs, etc. as desired.It is highly recommended to refrigerate this casserole dish for 8 or more hours before baking, but if you have last-minute plans and need a breakfast dish within a couple of hours, there is no crime in baking it right away. However, you should know that the results won't be quite the same.No need to preheat the oven. When you get up in the morning, grab the casserole from the fridge, uncover, pop it into the oven, turn it to 350℉, and set your timer for 55 minutes.* Nutrition is approximate.
