Amish Baked Corn Recipe

Amish baked corn, also known as "corn casserole", is a rich and comforting dish that's sweet and savory at the same time. It's a favorite in Amish cuisine and is enjoyed by many for its delicious, homestyle flavor. A great holiday side dish!

Ingredients
  

  • 2 tablespoon all-purpose flour
  • 1 tablespoon sugar
  • 1 can (approx. 15 oz.) whole-kernel corn (drained)
  • 1 can (approx. 15 oz.) creamed corn
  • 3 tablespoon butter (melted)
  • 2 large eggs (beaten)
  • 3/4 cup half and half (or whole milk)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika (optional)

Instructions
 

  • Preheat the oven to 350℉.
  • Mix the flour and sugar. Add the remaining ingredients, along with the corn, and mix well.
    2 tablespoon all-purpose flour, 1 tablespoon sugar, 1 can (approx. 15 oz.) whole-kernel corn (drained), 1 can (approx. 15 oz.) creamed corn, 3 tablespoon butter (melted), 2 large eggs (beaten), 3/4 cup half and half (or whole milk), 1/2 teaspoon black pepper, 1/2 teaspoon salt, 1/4 teaspoon paprika (optional)
  • Pour into an 8 or 9" square buttered baking dish.
  • Bake, uncovered, for approximately 45 minutes or until set. Let the casserole rest for at least 5 minutes before serving.
  • Refrigerate and reheat any leftovers.

Notes

Using 1 can of creamed corn produces a creamier, custard-like base. If you prefer a drier dish of baked corn, replace the creamed corn with whole kernel (baking time may vary). And if you put up your own corn, like the Amish do, feel free to use it instead of the whole-kernel and creamed corn.
This corn casserole is also good with buttered Ritz cracker crumbs on top. Crush about 10 Ritz crackers and mix the crumbs with 1 Tbsp. melted butter. After baking the corn for approx. 30 minutes, remove it from the oven, sprinkle with cracker crumbs, and continue baking until set.
Topping this corn casserole with shredded cheese for the last 10 minutes of baking is another great option.
