Amish Waffles Recipe
A simple Amish recipe for waffles with airy beaten egg whites, resulting in a tender and fluffy waffle with a crispy exterior. The best waffles ever!

- 2 cups flour
- 1 - 2 tablespoon sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs, separated
- 1 1/2 cups whole milk
- 6 tablespoons melted butter (1/3 c.)
Mix the dry ingredients in a separate bowl.

Separate the eggs.

Whip the egg whites in a clean mixing bowl until stiff peaks form. Set aside.
In another bowl, whisk the egg yolks, milk, and melted butter. Add the dry ingredient mixture and mix only to combine.

Carefully fold the beaten egg whites into the batter, trying to maintain the airy texture.
Pour or scoop the batter into a greased hot waffle iron, leaving a bit of space around the edges for the waffle to spread. Bake until nicely browned.
Serve immediately with your preferred toppings.
Waffles lose crispiness as they cool, but you can store leftovers in an airtight bag or container at room temperature for up to 2 days. For longer storage, refrigerate or freeze them. Reheat in the toaster or oven.
Substitute the butter for oil if desired, and feel free to add a tsp. of vanilla.
If you are short on time, you can skip the step of separating the eggs, but it will only take an extra 2-3 minutes. It does make a big difference in the texture of these waffles.
Follow the cooking instructions for your waffle iron. I use about a cup of batter per waffle with my iron, and it takes a few minutes to cook.
A nonstick iron probably will not need to be greased.
Plate the waffles individually as you cook, serving with your preferred toppings. Alternatively, place them on a rack and keep them warm in a preheated 170°F oven as you proceed with the cooking process!
