Amish Chicken Salad Recipe

This easy and delicious traditional Amish chicken salad recipe brings together classic flavors to make the best chicken salad sandwich. It is a perfect blend of cooked chicken, creamy mayo, tangy pickle relish, and a hint of sweetness, creating a mouthwatering experience in every bite.

Ingredients
  

  • approx. 4 cups cooked chicken breast, leftover chicken, or rotisserie chicken (2 large chicken breasts)
  • 3/4 cup Mayo
  • 2 1/2 tablespoons dill or sweet pickle relish
  • 1 1/2 teaspoons yellow mustard
  • 1 - 1 1/2 teaspoon sugar
  • 1 1/2 teaspoon lemon juice
  • 1/2 - 3/4 teaspoon salt
  • 3/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped celery (optional)
  • 2 tablespoons chopped green onions (optional) - approximately one stem

Instructions
 

  • If you don't have any leftover cooked chicken, cook a couple of chicken breasts until tender (at least165℉). Cool and shred or chop to desired consistency.

  • Mix the remaining ingredients in a large bowl.
    3/4 cup Mayo, 2 1/2 tablespoons dill or sweet pickle relish, 1 1/2 teaspoons yellow mustard, 1 - 1 1/2 teaspoon sugar, 1/2 - 3/4 teaspoon salt, 3/4 teaspoon paprika, 1 1/2 teaspoon lemon juice, 1/4 cup finely chopped celery (optional), 2 tablespoons chopped green onions (optional)
  • Add the cold, chopped or shredded chicken and mix well.
  • Store in the fridge in an airtight container until ready to serve.
  • Serve chicken salad on sandwich bread, buttery croissants, tortilla wraps, lettuce leaves, or however you like chicken salad.
  • Refrigerate for up to three or four days.

Notes

Mayo can be replaced with Miracle Whip or plain Greek yogurt if desired.
Depending on the type of chicken used, you may need less or more Mayo. You could start with less and add more to achieve your desired moisture level.
If your chicken isn't seasoned, you may need more salt. Feel free to adjust as necessary.
If you don't like chicken salad sweet, omit the sugar. Also, when using sweet relish, you may not need sugar.
