Instructions
Preheat the oven to 350°.
Beat eggs, and add brown sugar, melted butter, and milk. Mix well.
2 large eggs, 1 c. brown sugar (loosely filled), 1/2 c. butter (melted), 1 1/4 c. whole milk
Add the oatmeal, salt, baking powder, and cinnamon. Stir in the apples and mix to combine.
1 tsp. salt, 3 c. oatmeal, 2 tsp. baking powder, 1 - 2 tsp. cinnamon (optional), 1 - 2 apples, peeled and chopped or shredded (optional)
Pour the batter into a greased 9x13" pan. Bake at 350° for about 25 - 30 minutes or until set and no longer jiggly. Serve warm.
Store at room temperature for a day. And refrigerate for up to a week.

This is a basic and versatile baked oatmeal recipe. Add any fruit, seeds, nuts, chocolate chips, etc. I love adding chopped pecans or sliced almonds.When adding apples, if you want them nice and soft by the time the oatmeal is finished baking, make sure to finely chop them.Feel free to decrease the amount of brown sugar (it really doesn't need more than a half cup), and add more spices such as cloves, nutmeg, allspice, etc.And you can use rolled or quick oats. Rolled oats will produce a more crumbly texture, while quick oats create a denser texture. I like to use some of both.If you prefer a thicker cake-like baked oatmeal, you can bake this in a smaller dish, although it will take a bit longer to bake.*Nutrition is approximate.
