Amish Cheese Spread (Cup Cheese)
Melted white American cheese spread is served with bread/buns and peanut butter spread at Lancaster Amish church dinners. Soft and smooth white cheese spread.

- 1 1/3 c. milk
- 4 Tbsp. butter (1/2 stick)
- 1/4 tsp. salt (optional)
- 20 slices Deli/Deluxe White American cheese
- pinch baking soda
Pour the milk into a saucepan and bring it to almost boiling over medium heat.

Add the butter and salt. Stir until melted.
4 Tbsp. butter (1/2 stick), 1/4 tsp. salt (optional)
Reduce heat to low. Separate the cheese slices and add them individually. Stir or whisk until melted. Remove from the heat and add the pinch of baking soda.
20 slices Deli/Deluxe White American cheese, pinch baking soda
Place a piece of plastic wrap or parchment paper on top of the cheese and set it aside to cool.
Once the cheese has cooled, you can beat it to create a nice smooth consistency. Or leave it as it is. Chill and enjoy.
Keep refrigerated in an airtight container for up to one or two weeks.
This recipe makes about 2 1/2 c. of cheese spread.
It sets up fairly thick when refrigerated, but it will quickly thin out when left to sit at room temperature.
Growing up Amish in Lancaster County, we ate this cheese spread on buns with Amish peanut butter for church dinner. But it's also great as a dip with pretzels.
