Healthy Amish Banana Bread Muffins

Healthy and delicious banana muffins are easy to make and a perfect breakfast food or snack. It's also a great way to use up those bananas that got to brown to eat.

Ingredients
  

  • 3 bananas, preferably overripe
  • 4 Tbs. butter, melted 1/2 stick
  • 1 c. applesauce
  • 2 large eggs, room temperature or 1/2 c. eggbeaters
  • 2 c. whole wheat flour
  • 1/2 c. brown sugar
  • 1/4 c. white sugar
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 Tbs. ground cinnamon
  • 1/2 tsp. salt
  • pecans or walnuts

Instructions
 

  • Preheat oven to 350°
  • Mash bananas. Add all the wet ingredients into the mixing bowl and mix well.

  • Whisk dry ingredients together in a seperate bowl.
    2 c. whole wheat flour, 1/2 c. brown sugar, 1/4 c. white sugar, 1 tsp. baking soda, 1 tsp. baking powder, 2 Tbs. ground cinnamon, 1/2 tsp. salt
  • Add dry ingredients to the wet and mix gently until combined.
  • Pour into greased muffin tins or use liners. Divide into 12 - 14 cups, filling at least 3/4 full.
  • Place a pecan half (or two) on the top. Or you can sprinkle chopped pecans over the top.

  • Bake for 20 - 25 minutes or until a toothpick comes out with only a few crumbs.
  • Let them rest in the muffin tin for a few minutes, then remove to wire rack to cool. I always bag or place them in a container before they are completely cool. It helps to keep more moisture in. And freeze whatever you won't get eaten within 2 days to keep them fresh. Thaw for 1/2 hr. before eating.

Notes

Whenever I have bananas that get overripe, I put them in a bag and freeze them. These are perfect to use for banana muffins.
Pull the frozen bananas from the freezer several hours before you want to mix your muffins to give them time to thaw.
If you forget to thaw the bananas or suddenly decide to make muffins and you have no bananas thawed (which is usually my case) you can thaw them in the microwave on defrost setting. They will create some liquid. I pour off most of the liquid, but it is fine to add a bit of the liquid to your mixing bowl along with the bananas.
I usually just toss the bananas into my mixing bowl with the paddle attachment and let it do the mashing for me.
Sometimes it seems like too much batter for 12 muffins, so I make a few mini muffins as well. (I think it depends on the size of the bananas.)
