Amish Chewy Oatmeal Chocolate Chip Bars

These bars are amazing! They are so moist and chewy and full of chocolate chip goodness. They are also very easy and quick to make.

Ingredients
  

  • 1 c. white sugar
  • 1 3/4 c. brown sugar
  • 1 1/2 c. vegetable or canola oil
  • 1/2 c. softened butter
  • 5 large eggs
  • 2 tsp. vanilla extract
  • 4 c. all-purpose flour
  • 2 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 4 c. quick oats
  • 1 1/2 c. chocolate chips

Instructions
 

  • Preheat oven to 350°.
  • Place sugars, oil, butter, eggs, and vanilla into your mixing bowl. Mix well until nice and creamy.

  • In a separate bowl, whisk together the flour, salt, baking powder, baking soda, quick oats, and chocolate chips.
    4 c. all-purpose flour, 2 tsp. salt, 2 tsp. baking powder, 2 tsp. baking soda, 4 c. quick oats, 1 1/2 c. chocolate chips
  • Stir together the wet and dry ingredients until well mixed.
  • Spread onto a greased 13 x 18" sheet pan. (1/2 sheet pan, not jelly roll pan)
  • Bake for about 20 minutes or until set and lightly browned.
  • Cool before cutting into bars.
  • Store in an airtight container. Freeze whatever you won't get to eat within a few days.

Notes

I substitute pure cane sugar for white sugar in all my recipes. It works the same and is healthier for you.
You can substitute the butter and just use oil, and you can also add some chopped pecans for extra texture and flavor. Or substitute raisins for the chocolate chips.
If you won't get these bars eaten within a few days, freeze some for later. Then remove them from the freezer to thaw about 30 minutes before you want to eat them.
Do not overbake. If they are baked too long, they will be drier.
*Edited to add: I have had two people comment that they had to bake these bars for 40 minutes. I'm not sure what happened or what made the difference?? I have made these bars many times. I never bake mine longer than 20 minutes. A difference in ovens? Altitude? I don't know. Mine are always lightly browned and set by 20 minutes and I don't like over-baked and dry bars. But, if yours do not look finished by 20 minutes, you may need to bake them a little longer.
