Amish Chewy Oatmeal Chocolate Chip Bars

These bars are amazing! They are so moist and chewy and full of chocolate chip goodness. They are also very easy and quick to make.

Ingredients
  

  • 5 large eggs
  • 1 1/2 c. vegetable or canola oil
  • 1/2 c. melted butter
  • 2 tsp. vanilla extract
  • 4 c. all-purpose flour
  • 1 c. white sugar
  • 2 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 3/4 c. brown sugar
  • 4 c. quick oats
  • 1 1/2 c. chocolate chips

Instructions
 

  • Preheat oven to 350°.
  • Place eggs, oil, melted butter, and vanilla into your mixing bowl. Mix well until nice and creamy.
  • In a separate bowl, whisk together the flour, sugar, salt, baking powder, and baking soda. Add brown sugar, quick oats, and chocolate chips.
  • Stir together the wet and dry ingredients until well mixed.
  • Spread onto a greased 13 x 18" sheet pan.
  • Bake for 18 - 20 minutes or until set and lightly browned.
  • Cool slightly before cutting into bars.
  • Store in an airtight container.

Notes

I substitute pure cane sugar for white sugar in all my recipes. It works the same and is healthier for you.
You can substitute the butter and just use oil, and you can also add some chopped pecans for extra texture and flavor.
If you won't get these bars eaten within a few days, freeze some for later. Then remove from the freezer to thaw about 30 minutes before you want to eat them.
Do not overbake. If they are baked too long, they will be drier.
