Amish Gluten-free Monster Cookie Recipe
Amish Monster Cookies are a soft and chewy oatmeal cookie loaded with peanut butter, chocolate chips, and M&M's. They are amazing!

- 6 large eggs
- 2 c. brown sugar
- 2 c. white sugar
- 2 1/3 c. creamy peanut butter about 1 1/2 lb.
- 2 tsp. vanilla
- 2 sticks softened butter 1/2 lb.
- 4 tsp. baking soda
- 1/4 tsp. salt
- 9 c. quick oats
- 1 1/2 c. chocolate chips
- 1 1/2 c. M&M's
Cream sugars and eggs.
Add peanut butter, butter, and vanilla. Mix until creamy and smooth.
Add baking soda, salt, and oats. Mix.
Stir in chocolate chips and M&M's.
Bake at 350° for 10 - 11 minutes.
Let the cookies sit on the tray for a minute. Remove to a wire rack to cool.
My Kitchen-aid mixing bowl is not big enough to mix all of this dough. So I add as many oats as will fit in the bowl and slowly mix. Then I pour the cookie dough into a bigger bowl and stir in the remaining oats, chocolate chips, and M&M's.
This recipe makes a large batch (about 60 cookies), so I recommend storing some of your cookies in the freezer to keep them fresh.
