Amish Seven Layer Lettuce Salad

This is an easy, make-ahead, layered lettuce salad recipe that is great to take with you for your lunch, to a potluck dinner, or serve as a side with any meal.

Ingredients
  

  • 1 head iceberg lettuce (chopped or torn)
  • 1/2 - 1 c. celery (diced)
  • 4 - 5 hard-boiled eggs (diced)
  • 1 - 2 c. frozen peas
  • 1/4 - 1/2 c. green onions (diced)
  • 8 - 10 slices bacon (fried and crumbled)
  • 1 c. shredded cheddar cheese

Dressing:

  • 1 1/2 - 2 c. Miracle Whip or Mayo
  • 1 Tbsp. sugar
  • 1/4 tsp. salt

Instructions
 

  • Remove the first couple of leaves and the core from the head of lettuce. Chop the head of lettuce into bite-sized pieces and spread into the bottom of a 9 x 13" glass pan.
    1 head iceberg lettuce (chopped or torn)
  • Layer the celery on top of the lettuce and continue to layer the vegetables, eggs, and bacon on top.
    1/2 - 1 c. celery (diced), 4 - 5 hard-boiled eggs (diced), 1 - 2 c. frozen peas, 1/4 - 1/2 c. green onions (diced), 8 - 10 slices bacon (fried and crumbled)
  • In a small bowl, mix the dressing ingredients until creamy. Spread this over the top of the bacon.
    1 1/2 - 2 c. Miracle Whip or Mayo, 1 Tbsp. sugar, 1/4 tsp. salt
  • Sprinkle the cheese over the top. Cover and refrigerate overnight.
    1 c. shredded cheddar cheese
  • Best if served within two or three days. Although, this salad will be good for up to a week.

Notes

Options: This salad is versatile, you can use Romaine instead of Iceberg. Add more or less of each ingredient. Substitute the green onions for chopped red onions.
And you could add a layer of halved baby tomatoes, or whatever other vegetables you desire.
This salad looks nice and can easily be layered into a salad bowl instead of a 9x13". However, if layering it into a bowl, you'll want to create two layers of each ingredient. So only layer half of each ingredient into the bowl, then start over with more layers.
You can either stir the salad just before serving or serve it as it is.
