I portion the shredded zucchini into bags according to the amount needed for my favorite recipes and label each bag. I always add a bit extra, as frozen zucchini tends to shrink.
To use frozen zucchini for making this Amish casserole, defrost the frozen grated zucchini. Then place the thawed zucchini into a colander or strainer to drain excess water. Frozen zucchini often releases a lot of moisture, so it's important to remove most of it to prevent the casserole from becoming too watery.

I didn’t rate it because I didn’t make it yet. But I plan to. This sounds delicious. I live by myself and I’m older, I’m also very frugal out of necessity. I wanted to share a tip, my crackers will go stale before I can eat them. Using a food processor (or a zip-lock & rolling pin) crunch them up finely. Put in an airtight container and then in the freezer. They never go bad or get stale. i’ve got some. I’ve had in there over a year, I still use them for toppings, for piecrust (instead of graham crackers - personal preference). can’t wait to try your recipe.
