Amish Peach Cobbler Recipe

A delicious recipe for Amish peach cobbler made with fresh peaches in a sweet cinnamon-sugar filling, and a fluffy, buttery cake-like crust that is baked to golden perfection. Can also be made with fresh berries for berry cobbler.

Ingredients
  

Fruit:

  • 1/4 - 1/2 c. sugar
  • 1 Tbsp. all-purpose flour
  • 5 - 6 c. sliced, fresh peaches
  • 2 tsp. lemon juice
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt

Batter:

  • 2 large eggs
  • 1 c. sugar
  • 1/2 c. melted butter (8 Tbsp.)
  • 3/4 c. milk
  • 1 tsp. vanilla extract
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Instructions
 

  • Preheat the oven to 375℉.

Fruit:

  • In a large bowl, mix together the sugar and flour.
    1/4 - 1/2 c. sugar, 1 Tbsp. all-purpose flour
  • Add the prepared peaches and remaining ingredients. Toss to combine.
    5 - 6 c. sliced, fresh peaches, 2 tsp. lemon juice, 1 tsp. vanilla, 1/2 tsp. cinnamon, 1/4 tsp. salt
  • Spread into the bottom of a 9x13" baking dish.

Batter:

  • Beat the eggs and sugar. Add the melted butter, milk, and vanilla and mix.
    2 large eggs, 1 c. sugar, 1/2 c. melted butter (8 Tbsp.), 3/4 c. milk, 1 tsp. vanilla extract
  • Add the remaining ingredients and mix to combine.
    1 1/2 c. all-purpose flour, 2 tsp. baking powder, 1/2 tsp. salt
  • Spread the batter evenly over the fruit and sprinkle with a bit of coarse sugar. Bake for approximately 35 - 40 minutes or until the topping is golden and the fruit is tender.
  • Best when served warm right out of the oven with a scoop of vanilla ice cream or whipped cream.

Notes

This recipe can be also used to make berry cobbler or apple cobbler. When using apples, add 1/4 cup of water to the apples. And you may want to prebake the apple mixture a bit, before topping with the batter, to ensure that they get soft before the cake layer gets overbaked. (Or slice them very thin.)
