Amish Granola Bars Recipe

Homemade Granola Bars with chocolate chips and marshmallows are a chewy, easy to make, and no-bake winning combination and kid favorites. Perfect for packing for school or an afternoon snack.

Ingredients
  

  • 5 Tbsp. butter
  • 1/4 c. oil
  • 1 1/2 lb. mini marshmallows
  • 1/2 c. peanut butter
  • 1/3 c. honey
  • 5 c. quick oats
  • 4 1/2 c. Rice Krispies
  • 1 c. graham cracker crumbs (about 6 whole crackers crushed)
  • 1 c. mini chocolate chips
  • 1 c. unsweetened coconut flakes, optional

Instructions
 

  • In a large greased bowl, mix Rice Krispies, oats, cracker crumbs, chocolate chips, and coconut.
    4 1/2 c. Rice Krispies, 5 c. quick oats, 1 c. graham cracker crumbs (about 6 whole crackers crushed), 1 c. mini chocolate chips, 1 c. unsweetened coconut flakes, optional
  • Heat butter and oil in a large pot over low heat. Grease the sides of the pot with some of the oil.
    5 Tbsp. butter, 1/4 c. oil
  • Add the marshmallows and stir until melted.
    1 1/2 lb. mini marshmallows
  • Remove from the heat, add the peanut butter and honey. Stir until mixed, And immediately pour slowly over the granola mixture as you are stirring until everything is combined.
    1/2 c. peanut butter, 1/3 c. honey
  • Press the mixture into a greased 10 x 15" sheet pan (jelly roll size).
  • Cool and cut into bars. Store in an airtight container at room temperature for a week. If you need to keep them longer than that, you may want to store them in the refrigerator.

Notes

Make sure your bowl and utensils are well-greased, because we all know how sticky marshmallows are.
And you will need to work quickly to get the melted marshmallow mixture mixed with the dry ingredients since it gets harder to mix as the melted mixture cools down.
