Caramel dumplings are fluffy, sweet, flour dumplings that are cooked in a caramel sauce. It's a very easy and quick dessert that is amazing with a scoop of vanilla ice cream.
Drop the dumpling mixture into the simmering caramel sauce by tablespoonfuls, leaving a small space between each dumpling.
Cover tightly and simmer on low for 20 minutes. Set your timer and DO NOT lift the lid until it's been 20 minutes. (Lifting the lid will result in soggy dumplings.)
Serve warm with ice cream.
Notes
You can add 1/2 c. of peeled and chopped apples to the dumpling batter if desired. And it's good with some chopped pecans added to the caramel sauce as well.
