    Chicken for Chickenetti Casserole

    This easy Amish casserole dish is a great way to use up leftover chicken. However, if you don't have any leftover chicken in your refrigerator, there are other easy options.

    1. Rotisserie Chicken: Grab a cooked rotisserie chicken from the store. Debone and shred the meat then mix it with spaghetti and the creamy white sauce.
    2. Grilled Chicken: Cook some chicken breast on the grill with simple seasoning. Chop or shred the grilled chicken and combine it with the remaining ingredients.
    3. Boiled Chicken: Boil boneless chicken breasts with garlic salt in a bit of water until fully cooked. Shred/chop the boiled chicken and blend it in with the spaghetti and creamy sauce.

    Do Amish Use Canned Cream Soups?

    Since Amish women mostly cook from scratch, some people get the idea that they do not use canned soups.

    While it is true that many Amish meals are hearty and made from scratch, they also make use of store-bought items and take shortcuts. In fact, a lot of Amish casserole recipes include canned cream soups.

    Some probably make homemade cream soups, but most will buy them for convenience's sake. (Feel free to use homemade if preferred.)

    How to Make Easy Chicken Spaghetti Casserole

    To make this cheesy chicken spaghetti casserole, fill a large pot with water and a teaspoon of salt. Bring it to a boil, cook pasta to al dente, and drain it in a large strainer (affiliate link).

    In a large bowl, mix the cream soups, chicken broth, cheese, and seasonings. Add the cooked chicken and spaghetti. Mix to combine and pour it into a greased baking dish.

    Bake until heated through. (This dish could also be heated in a slow cooker for easy transport when sharing at a potluck event.)

    Serve with a side lettuce salad, broccoli salad, or fresh veggies for a great meal.

    Ingredients
      

    • 3 - 4 cups cooked chicken (chopped or shredded)
    • 1 pound dry spaghetti noodles
    • 1 can (10.5 oz.) cream of chicken soup
    • 1 can (10.5 oz.) cream of mushroom soup
    • 2 ½ cups chicken broth
    • ¼ cup finely chopped onion
    • ¼ teaspoon seasoned salt
    • ½ teaspoon black pepper
    • 10 - 12 ounces Velveeta cheese, cut into small cubes
    • ½ teaspoon garlic powder (optional)

    Instructions
     

    • If you don't already have cooked chicken on hand, you will want to begin by cooking chicken.
      3 - 4 cups cooked chicken (chopped or shredded)
    • Boil approximately 4 quarts of water, add 1 to 1 ½ tsp. salt and boil the spaghetti noodles according to the al-dente instructions on the package (approximately 10 minutes). Drain and set aside.
      1 pound dry spaghetti noodles
    • Mix the remaining ingredients in a large bowl. Add the noodles and chicken and mix to combine.
      1 can (10.5 oz.) cream of chicken soup, 1 can (10.5 oz.) cream of mushroom soup, 2 ½ cups chicken broth, ¼ cup finely chopped onion, ¼ teaspoon seasoned salt, ½ teaspoon black pepper, 10 - 12 ounces Velveeta cheese, cut into small cubes, ½ teaspoon garlic powder (optional)
    • Pour the mixture into a greased casserole dish. Cover and bake at 350℉ for 45 minutes. Remove the cover and bake for another 10 - 15 minutes. Stir and serve.
    • Cool and refrigerate any leftovers. Reheat and enjoy within three or four days.

    Notes

    If preferred, use American cheese or shredded cheddar cheese instead of Velveeta. You can also sprinkle some cheese over the top for the last few minutes of baking.
    This dish can be made ahead and refrigerated. (Chicken always needs to be chilled completely before putting it into an airtight container.) If baking from cold, it will take at least an hour or more.

      You're missing a few ingredients. I use celery salt. Also, I use the Velveeta, but I spread shredded cheddar and bread crumbs on top after it's in the dish. And you can use any pasta, not just spaghetti.

      Love this! I did add a can of mild rotel tomatoes which added a little zing to it. I will definitely use this recipe for a quick go to dinner for my family.
