    Cherry Pie With Graham Crust

    This Amish cherry pie recipe with canned filling and a graham cracker crust is a super quick and easy-to-make dessert that will be a hit at any party or gathering! Similar to my cherry delight recipe, this is a no-bake cherry pie that takes only minutes to assemble.

    The delightful combination of tangy cherries, creamy cheesecake, and the subtle sweetness of the buttery graham cracker crust creates a mouthwatering symphony of flavors that's bound to leave your guests raving.

    2. Brown Sugar: Adds a rich, sweet, and warm flavor to the graham cracker crust, making it more delicious and complementing the tartness of the cherries in the dish.
    3. Butter: Acts as a binder, bringing the crust ingredients together, and contributing a rich, buttery flavor. It also helps create a firm and cohesive crust.

    Cheesecake Filling:

    1. Cream Cheese: Forms the creamy and decadent base of the cheesecake filling, adding richness and a tangy flavor.
    2. Lemon Juice: Brightens the overall flavor, providing a subtle citrusy tang that enhances the sweetness and richness of the cream cheese.
    3. Powdered Sugar: Sweetens the filling, ensuring a smooth and consistent sweetness throughout. It also helps maintain a creamy texture.
    4. Whipping Cream: Adds lightness and a fluffy texture to the filling, contributing to the overall creaminess of the cheesecake. (If desired, add 1 cup thawed Cool Whip instead of whipping cream. Cool Whip is more stable in warm weather than whipping cream, so keep that in mind if you will be serving this dessert at an outdoor party.)
    5. Pinch of Salt: Enhances the flavor and promotes smoothness in the cheesecake filling.

    Topping:

    1. Canned Cherry Pie Filling: Serves as the crowning jewel, providing juicy, sweet, and tart cherries that complement the creamy cheesecake filling. It adds a burst of fruity flavor and a visually appealing finishing touch. (You can use homemade cherry pie filling if desired.)

    How to Make an Easy Graham Cracker Cherry Pie

    1. Prepare the Homemade Graham Cracker Crust:
      • Crush graham crackers in a bag with a rolling pin or put them through a food processor.
      • In a small bowl, mix the crumbs with brown sugar.
      • Melt the butter and add it to the crumbs. Mix well until the mixture resembles wet sand.
      • Press the graham cracker crumbs mixture into a 9-inch pie dish to create the crust.
      • Chill in the fridge while preparing the filling.
      • (If a crispier crust is desired, you can bake the graham crust at 350 degrees for approximately 10-15 minutes. Cool before adding the filling.)
    2. Make the Cream Cheese Filling:
      • In a large bowl, using a hand mixer or a large stand mixer, blend room-temperature cream cheese until smooth.
      • Add lemon juice, powdered sugar, and salt. Mix until smooth and creamy.
      • Add the heavy whipping cream and beat until thickened.
    3. Assemble the Pie and Chill:
      • Evenly spread the cream cheese mixture into the prepared graham cracker crust.
      • Cover the pie with plastic wrap, and refrigerate for a few hours or overnight to set.
      • Spread the canned cherry pie filling on top.
      • Store in a closed container or cover with plastic wrap.
    4. Enjoy the Perfect Cherry Pie:
      • Cut into slices and serve.
      • If desired, add a dollop of whipped cream or Cool Whip on top of each slice, or serve it with a scoop of vanilla ice cream for extra indulgence.
      • Savor the delicious combination of graham cracker pie crust, cream cheese filling, and sweet cherry pie filling in every bite.

    Pie Filling

    Using canned cherry pie filling makes this recipe very quick and easy to put together. However, it's not hard to make homemade cherry pie filling either. So if you have fresh cherries on hand, feel free to make your filling for this no-bake cheesecake pie. (Pie filling is typically made with sour cherries.)

    Ingredients
      

    Graham Crust:

    • 1 ½ cups graham cracker crumbs (9 whole graham crackers - 1 pkg.)
    • 2 tablespoons brown sugar
    • ½ cup melted butter (1 stick)

    Cream Cheese Filling:

    • 2 (8 ounce) pkg. cream cheese (softened)
    • ⅔ cup powdered confectioners sugar
    • 1 tablespoon lemon juice
    • pinch of salt
    • ½ cup heavy whipping cream

    Topping:

    • 1 (21 ounce) can cherry pie filling

    Instructions
     

    Crust:

    • Crush graham crackers in a bag with a rolling pin or put them through a food processor until fine.
      1 ½ cups graham cracker crumbs
    • In a small bowl, mix the graham crumbs and brown sugar.
      2 tablespoons brown sugar
    • Melt the butter and mix it into the crumbs.
      ½ cup melted butter
    • Press the crumb mixture evenly into the bottom and sides of a 9-inch pie plate.
    • Refrigerate the crust while preparing the filling.

    Cream Cheese Filling:

    • Beat softened cream cheese until smooth.
      2 (8 ounce) pkg. cream cheese (softened)
    • Add the powdered sugar, lemon juice, and salt. Scrape the sides of the bowl and mix until smooth and creamy.
      ⅔ cup powdered confectioners sugar, 1 tablespoon lemon juice, pinch of salt
    • Add the heavy whipping cream and beat on high speed until thickened.
      ½ cup heavy whipping cream
    • Evenly spread the cream cheese filling into the cooled pie crust.
    • Cover and refrigerate for at least 2 hours.
    • Spread the cherry pie filling over the top. Chill and serve.

    Notes

    Heavy whipping cream can be replaced with 1 cup of thawed Cool Whip.
    This pie is not very sweet, if you prefer it sweeter add up to a cup of powdered sugar to the cream cheese filling.
    If desired, you can bake the graham crust for approximately 10-15 minutes. Cool before adding the filling.
    The crust and cheesecake filling serves as a base for different flavor profiles. Try this easy pie with blueberry pie filling, raspberry, strawberry, etc.
